A Taste of Africa: The Battle of the Best Jollof!

In Africa, food is more than just something you eat. It is identity and history served on a plate. The jaw-dropping aroma from each cuisine, the unique colours of every dish, along with the unique story told through each meal, truly showcases the beautiful and rich history Africa holds. For centuries, food has been the glue connecting communities together and has been used as a powerful tool to unite. 

With 54 countries across this vast, diverse and vibrant continent, there are thousands of traditional and unique dishes throughout the “Mother Continent”. From injera flatbread and ugali porridge in the East, to tagine stews and couscous in the North, to braaivleis (grilled meat) and savoury maize-based pap in the south, and spicy jollof rice and starchy fufu in the West, there is something for every palate.

When it comes to West African cuisine though, there is just one question that stands above the rest: which country has the best Jollof Rice? 

Ghana’s jollof walks into the room like it already knows its worth— and for good reason. The aroma alone turns heads. From their tomato base, warm spices, and slow-cooked depth that feels like it took patience and dedication to perfect, it’s easy to understand why Ghanaians are proud of their dish. At parties in Ghana, jollof sits proudly at the centre of the table, everyone eager for their portion, often going back for seconds. Every spoonful feels carefully crafted, and if you ask a Ghanaian? The answer is simple— there is no debate. Their jollof speaks for itself.

And then there’s Liberia, many don’t talk about Liberia in the jollof conversation. People often place other countries ahead, but don’t let that fool you. Liberia is quietly confident. There, jollof carries a darker, richer tone. Sometimes a little sweeter, sometimes heavier with seasoning- but always flavourful. It feels like home cooking: the kind of meal that brings everyone into the kitchen before it’s even done. Liberian jollof might not shout the loudest in the global “Jollof Wars” but it doesn’t need to. Its strength lies in its depth—in the way it fills both your stomach and your spirit. If you ever want an underrated pick, Liberia should be your choice.

Now Nigeria….Nigeria doesn’t just enter the debate, it takes over the conversation. In Nigeria, jollof rice is not just food— it represents Nigerians globally. It is confident. It is bold. It is dramatic. The peppers hit first—not painfully—but somehow the perfect balance between spice and flavour. The smokiness lingers in the air before you even take a bite. And then there’s the texture: never soggy, each spoonful somehow better than the one before. But the real magic? That slightly crispy bottom layer everyone hopes to get. There’s something about that layer that makes Nigerian jollof special. It wins because it’s Fearless. It doesn’t try to be subtle. It’s unforgettable— which is why many see it as the GOAT.
